The Porthole is a simple, beautiful infusion vessel designed by Martin Kastner. It can be used to create striking cocktails, oils, teas, dressings, lemonade, coffee, or any other type of cold infusion. The Porthole was originally created as a custom piece for the bar chefs at The Aviary, Grant Achatz‘s acclaimed “molecular gastronomy” cocktail lounge in Chicago’s West Loop. Achatz is the man behind the world-renowned Chicago restaurant Alinea and the cocktails at The Avairy are similarly experimental.
The Porthole Infuser holds 13 fluid ounces and includes three filter screens of varying densities, silicone cap, hex key, set of alternative thumbscrews, and a recipe booklet of cocktails from The Aviary.
